Summer is just around the corner, and fruit-filled cookies seem just right at this time of year. This week's recipe kicks off the summer season with the bright, tart flavor and sunny color of apricots. The filling is easy to make; you simply simmer dried apricots with orange juice and sugar until soft, then puree them. The thick filling is spooned onto a thin layer of butter cookie dough (scented with almond extract), and another layer of dough is pressed on top.
