The more accurate name for this type of beverage is masala chai. A good cup of chai balances the strong flavors of tannic black tea and pungent spices with the mildness of milk and honey, and drinking it is a satisfying and soothing experience. In this week's recipe, traditional chai spices work well together against the backdrop of a plain butter cookie dough, enhanced with brown sugar. These cookies taste like a more subtle gingerbread, and taste good whether plain or iced with a tea-infused glaze. Enjoy!
