Blog Cherry-Coconut Cookies
You might think of candied fruit as something that belongs in a dense holiday cake, but sweet, chewy glacé cherries are at home in other desserts too. They provide a decorative touch to frosted cakes and they add color and moisture to rolled cookies. The pale pink dough in this week's cookie recipe is chock-full of candied cherries and sweetened flaked coconut, which make a lovely combination in terms of both flavor and texture. A dash of almond extract further complements the cherry flavor (almonds and cherries are related). Though the cookies taste great plain, a coat of pink frosting dresses them up enough to serve to company or give as a gift. In fact Mother's Day is coming in a few weeks and you may want to bake a batch to give to a special mother in your life–these cookies would make a sweet impression.
