Part of the fun of receiving a box of assorted Valentine's chocolates is discovering what's inside each candy. Of course many boxes come with a little chart or list, but that takes the adventure out of snacking; much better to just grab an interesting shape and take a bite. It could be caramel and nuts (yum) or it could be some pastel-colored mystery cream (no thanks). When I was young, the prize of the bunch as far as I was concerned was the tall dome-shaped milk chocolate bon-bon that enclosed a juicy cherry in sweet syrup. It was drippy, messy, large, and fruity—everything a fancy chocolate should be. My tastes have branched out over the years but I still have a soft spot for those chocolate-covered cherries, and this week's cookie recipe is a nod to their flavors: tender, dark chocolate cookies with kirsch-scented dried tart cherries, coated with a white chocolate ganache. Baked in a large heart shape, one of these cookies would make the perfect Valentine sweet for any of your loved ones, young or not-so-young.
