Blog Chocolate Cupcake Cookies with Fluffy White Frosting
What makes cupcakes so popular? Well, they're just the right size for one person, they can be made in a variety of great flavors, they're coated in lush frosting, they are cute as can be when decorated. Hmmm, sounds a lot like cookies. This week's recipe makes thick, tender chocolaty cookies covered by classic fluffy white icing. Cut them with our cupcake cookie cutter shape, and you've got the best of both cookie and cupcake worlds. The chocolate cookie dough bakes up into cookies that are softer than usual but still hold their shape. The icing recipe is a variation of the standard seven-minute icing, in which a hot sugar syrup is added to whipping egg whites, which billow up to make a glossy, marshmallow-y meringue. To be sure, these cookies can't be stacked and don't travel well; but the combination of crisp-tender cookie and soft icing makes them a treat you want to enjoy right away.
