Blog Pizza People (Mini Pizzas)

Here's a way to provide a nutritious snack or light lunch and put a smile on someone's face at the same time: make cookie-cutter pizzas. These mini pizzas use ingredients that are easy to keep on hand, and they can be quickly assembled and baked (particularly if you have a toaster oven). For an easy, quick, and crisp crust, start with lavash bread. Simply cut shapes from the lavash and bake or toast them for a couple of minutes, just until they're crisp but not brown. This makes the bread sturdy enough to hold the sauce and toppings. Spread your favorite pizza sauce, cheese, and toppings on each shape, pop into the oven (or toaster oven) and bake until the cheese has melted and turned light golden brown. Let the pizzas cool for a few minutes and serve.

I made pizza people using our gingerbread man cutter, but there are plenty of other shapes that would make cute little pizzas–butterflies, elephants, sunflowers, and crowns are just a few of the possibilities. Enjoy!

Mini Pizzas

Makes about 10

Using your favorite Ann Clark cookie cutter, cut shapes from:

2 rounds lavash bread
Toast in toaster oven just until crisp, 3 to 4 minutes.
Turn toaster oven to "bake" setting and set to 400 degrees.

Spread each shape with:

1 tablespoon pizza sauce (recipe below)

Sprinkle each shape with:

2 tablespoons shredded mozzarella cheese

Top with about 1 tablespoon total of any of the following:

Bell peppers, chopped
Mushrooms, sliced thin
Onions, sliced thin
Pepperoni slices, cut into small pieces
Olives, chopped
Basil leaves, shredded

Bake pizzas until cheese is melted and bubbly, 5 to 7 minutes. Let cool for a minute or two, then serve.

Quick Pizza Sauce

Makes about 1 cup

Heat 1 tablespoon olive oil in small sauce pan over medium heat. Add 1 small garlic clove, minced, 1/2 teaspoon dried oregano, and 1/2 teaspoon dried basil, and heat, stirring, until garlic turns light golden brown, 30 to 60 seconds. Add 1 (8-ounce) can tomato sauce, stir, and simmer 5 to 7 minutes. Add salt and pepper to taste.
