Blog Red Velvet Cookies With Cream Cheese Frosting

Use one of Ann Clark's cupcake cookie cutters or a more traditional heart shaped cookie cutter to create the shape which best fits your occasion.

Red Velvet Cookie Recipe

Ingredients:

  • 1 cup (2 sticks) unsalted butter, at room temperature
  • 2/3 cup sugar
  • 1/2 teaspoon salt
  • 2 cups all-purpose flour
  • 3 tablespoon cocoa powder
  • 2 teaspoon raspberry, strawberry or cherry extract
  • 1 tablespoon milk
  • 1 teaspoon Christmas Red concentrated icing gel

Directions:

Beat butter and sugar with an electric mixer until light and fluffy. Add salt and flour until just incorporated. Add coca powder and beat again. Add vanilla, milk and icing gel and beat until completely incorporated. Divide dough into 2 equal portions and pat down into round disks onto plastic wrap. Wrap and refrigerate for 2 hours.

Preheat oven to 350ºF and line cookie sheet with parchment paper. Lightly flour work surface and rolling pin. Remove refrigerated dough one at a time and work dough in hands to soften and smooth surface of dough. Reform dough into a disk, place on floured surface and lightly sprinkle flour on top. Roll to ¼" thick and cut cookies with your cupcake cutter, reroll scraps and repeat.

Transfer cut cookies from the rolling surface to lined cookie sheet using a spatula. Bake for 11 minutes. Let cookies rest on cookie sheet for 2-3 minutes before transferring to a wire rack to cool completely. Repeat with second dough from refrigerator. Makes 12 cookies.

Cream Cheese Frosting

Ingredients:

  • 1 package cream cheese (8oz.), room temperature
  • 1 stick butter, room temperature
  • 3 cups confectioners sugar
  • 2 teaspoons vanilla extract

Directions:

Place butter, cream cheese and vanilla into a bowl, beat using an electric mixer for 1-2 minutes until completely incorporated. Add confectioners sugar ½ cup at a time until frosting is light and creamy. Yield 2 cups of frosting. We recommend decorating cookies with frosting immediately before serving. Frosting can be made ahead of time and stored in the refrigerator, be sure to let it soften at room temperature before decorating cookies.
