Potato Chip Cookies Recipe

Vary the amount of salt in this recipe depending on how salty your potato chips are. You will need about 4 ounces of potato chips to make 1 cup crumbs. You can place them in a bag and crush them with a rolling pin or pulse them in a food processor, about 16 pulses.

Cream together until light and fluffy:
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1/3 cup brown sugar

Beat in:
1 large egg
1/2 teaspoon vanilla extract

Whisk together then add:
2 cups all purpose flour
1 cup potato chip crumbs
1/4 to 1/2 teaspoon kosher salt

Mix just until all ingredients are well blended. Chill dough for 3 to 4 hours before rolling. Preheat oven to 350 degrees. Roll dough out on a lightly floured counter to 1/4 inch thickness. Cut with your favorite Ann Clark cookie cutter. Bake 10 to 12 minutes, until light golden brown. Let cookies cool slightly on cookie sheets and then transfer to a wire rack to cool completely. Drizzle with chocolate ganache, if desired.
