Crispy Rice Cut-Outs
Makes about 12
If you like, you can substitute 10 ounces (about 2 cups) marshmallow creme (Fluff) for the marshmallows. An easy and effective way to flatten the rice mixture is to cover it with a sheet of parchment, waxed paper, or plastic wrap on top, then place a second sheet pan on top and press down on it.
Melt in a large saucepan over medium heat, stirring frequently:
6 tablespoons unsalted butter
15 ounces marshmallows
1/8 teaspoon salt
Remove from heat, then add and stir in:
1 teaspoon vanilla
8 cups crisp rice cereal
Turn out onto a 12 by 18-inch sheet pan that has been greased and lined with parchment or waxed paper. Press into an even layer (see note). Let cool and set at least 30 minutes, then cut into shapes and decorate.
