
Chewy Gingerbread Cookies
These are soft, chewy cookies with pure ginger flavor. They work wonderfully as gingerbread men or other cut cookies for the Christmas season.

INGREDIENTS:
- 1/2 cup Black tea
- 1 cup Unsalted Butter, Softened
- 1 cup Sugar
- 1 teaspoon Vanilla
- 1 cup Molasses
- 5 cups Flour, Sifted
- 1 tablespoon Ground Ginger
- 1 teaspoon Cloves
- 1 teaspoon Baking Soda
- 1/2 teaspoon Salt
DIRECTIONS:
Prepare and set aside to cool:Black tea
Cream together:
Unsalted butter, softened
Sugar
Vanilla
Beat in:
Molasses
Mix together, then add to butter mixture alternately with the cooled tea:
Flour (sifted)
Ground ginger
Cloves
Baking soda
Salt
Mix all ingredients well. Chill for at least 24 hours. Preheat oven to 375 degrees. Roll dough out on a lightly floured counter to 1/4 inch thickness and cut with your favorite Ann Clark cookie cutters, then transfer cookies onto cookie sheets that have been lined with parchment paper or silicone liners. Bake 8 to 10 minutes until lightly colored. Let cookies cool slightly on cookie sheets, then transfer to a wire rack to cool completely. Dip them in melted chocolate as pictured, or decorate with Royal Icing or buttercream frosting, or just eat them plain.

We first made the recipe about 3 years ago after returning from Helen, GA. We found a Gingerbread Man cookie cutter that came with a recipe from Anne Clark. These cookies are soft and taste so good! They are just perfect for the holidays. I just couldn't believe how much flavor & just so easy this cookies were to make. I'm here buying more cookie cutter shapes now for myself and my grown kids, so they can make memories for their family to come!
