No-Bake Cookie Dough Bites
Eating cookie dough is one of life's guilty pleasures, and this recipe takes it up a notch. We especially love these no-bake cookies in the summer if it's too hot to turn on the oven. Chocolate chip cookie dough is rolled, cut into shapes, and dipped in melted chocolate then chilled. Small, simple shapes like hearts, stars, or seashells work best.
- 1 cup All-Purpose Flour
- 1/4 teaspoon Salt
- 1/2 teaspoon Baking Soda
- 1/2 cup Butter, softened
- 1/2 cup Sugar
- 1/4 cup Brown Sugar
- 1/2 teaspoon Vanilla Extract
- 3 cups Chocolate Chips
- 3 tablespoons Water
- Decorative sprinkles, icing or melted white-chocolate chips (optional)
DIRECTIONS:In a bowl, cream sugar and brown sugar in softened butter. Add flour, salt, baking soda, vanilla extract and water. Add 1 cup of chocolate chips, and mix well.
Turn the cookie dough out onto a sheet of baker's parchment paper. Lay a second piece of parchment paper on top of the dough and roll to roughly 1/2-inch thickness. Put the rolled dough into the refrigerator for 20 minutes so it will be easy to cut with cookie cutters. Remove from fridge and cut with small heart-shaped or other cookie cutter shapes.
Melt 2 cups chocolate chips in a saucepan over low heat or in a microwave for 15-20 seconds, stirring until fully melted. Holding each heart on a fork, immerse in the melted chocolate one at a time, coating the entire shape with chocolate.
Place each chocolate-covered heart on the parchment paper. For a decorative touch, you can add sprinkles while the chocolate is still melted, or allow it to cool and then accent with icing or drizzled melted white-chocolate. When done decorating, chill in the fridge for 10 additional minutes, and serve.
