These are the perfect basic cookies for decorating. If you like, reduce the vanilla to 1/2 teaspoon and add 1/2 teaspoon of almond extract. To decorate, use our Royal Icing recipe.
- 1 cup Unsalted Butter, Softened
- 2/3 cups Sugar
- 1 Egg
- 1 teaspoon Vanilla
- 1/2 teaspoon Salt
- 2 1/2 cups Flour, Sifted
Butter and Sugar
Mix until all ingredients are well blended. Chill dough 3-4 hours before rolling, so the dough is easy to roll, and won't spread during baking.
Preheat oven to 350 degrees. Roll out on a lightly floured counter to 1/4" thick and cut with your favorite Ann Clark cookie cutters, then transfer cookies onto cookie sheets that have been lined with parchment paper or silicone liners. Bake about 8-10 minutes or until lightly colored. Let cookies cool slightly on cookie sheet, then transfer to a wire rack to cool completely. Decorate with Royal Icing (from our recipes) or buttercream, or eat plain.

I made these again for approximately the 20th time. We do a bake sale for our music school, and a double batch made about 40 large cookies (the large musical note shape). We sold them for $3 each, and they were gone in about half an hour (some families bought a bunch at a time)! I work full time and still have time to make these over the course of a few days (for drying, etc.). I think I might make these every week.

I've been using this recipe for years. I hold workshops for the Mini 4-H members in our county and these cookies are the treat they enjoy at the end of the programs. So easy and they hold the cutter's shape well. Have substituted lemon or almond flavorings for the vanilla. Still delicious!
